Make Ahead
1 day ahead:
Peel carrots.
Cut sweet potatoes.
Measure honey, oil, salt, and Solar Bloom.
Day of:
Toss and roast.
Before You Start
Preheat the oven to 425°F (220°C).
Line a baking sheet with parchment paper.
Peel and cut all vegetables before mixing.
Measure olive oil, honey, salt, and Solar Bloom before beginning.
Keep Solar Bloom separate from the roasting ingredients—it is designed to be added after cooking.
Have a serving platter or bowl ready before the vegetables come out of the oven.
Solar Bloom is a finishing spice. It should be added while the vegetables are warm, but never returned to heat after application.
Prep (10–15 min)
Peel carrots. Cut carrots in half lengthwise. Cut orange sweet potatoes and purple sweet potatoes into ¾–1 inch chunks. Measure olive oil, honey, salt, and Solar Bloom. Line a baking sheet with parchment paper.
1. Heat the Oven (10 min)
Preheat oven to 425°F (220°C).
While oven heats:
Finish vegetable prep.
Measure remaining ingredients.
Prepare baking sheet.
2. Glaze the Vegetables (2–3 min)
Combine:
1½ lb carrots
1 lb orange sweet potatoes
1 lb purple sweet potatoes
2 Tbsp olive oil
2 Tbsp honey
¾ tsp fine sea salt
Toss until evenly coated.
Done when:
Vegetables appear glossy but not wet.
3. Roast the Roots (30–35 min)
Spread vegetables in a single layer on the prepared baking sheet.
Roast for 30–35 minutes.
At 15 minutes:
Turn vegetables.
Rotate pan if your oven cooks unevenly.
While roasting:
Prepare serving platter.
Stage Solar Bloom.
Done when:
Carrots are caramelized.
Sweet potatoes are tender.
Purple sweet potatoes are easily pierced with a fork.
Honey glaze is lightly sticky.
4. Rest Briefly (1–2 min)
Remove from oven.
Allow vegetables to rest 1–2 minutes.
Done when:
Steam has settled slightly.
Vegetables remain warm.
5. Finish with Solar Bloom (30 sec)
Sprinkle:
½ tsp Solar Bloom
Toss gently once.
Do not return to heat.
