1½–2 lb boneless skinless chicken thighs, cut into 1-inch chunks
12 oz andouille sausage, sliced into ¼–½ inch rounds
½–1 lb raw shrimp, peeled and deveined

1 green bell pepper, diced
2 celery stalks, diced
4 cloves garlic, minced
Rice & Liquid
1 cup long grain white rice
2 cups low-sodium chicken stock
Seasoning & Finish
1.75 tbsp Delta Creole Blend, divided
1–2 tbsp butter
1 tsp light brown sugar
½ tsp apple cider vinegar

Make Ahead
1 day ahead: Dice vegetables, cut chicken, slice sausage, peel shrimp, and measure seasonings.
Before You Start
Remove shrimp from the refrigerator.
Measure all ingredients before heating the pot.
Having everything prepared and staged before cooking begins will make the process smoother and prevent overcooking during the faster stages.
Prep (10 min)
Dice onion, pepper, and celery. Mince garlic. Slice sausage. Cut chicken into 1-inch chunks. Measure rice, stock, seasoning, sugar, and vinegar.
1. Brown the Chicken (6–8 min)
Heat butter over medium-high heat. Add chicken and season with ½ tbsp Delta Creole Blend.
Cook 3–4 min without stirring. Flip and cook 2–3 min more until lightly browned but not fully cooked. Remove and reserve.
While chicken cooks: prepare shrimp and stage remaining ingredients.
2. Brown the Sausage (4–5 min)
Add sausage and cook until lightly browned and beginning to render fat.
3. Cook the Trinity (5–6 min)
Add onion, pepper, and celery. Cook until softened. Add garlic and cook 30 seconds.
4. Bloom the Blend (30 sec)
Add ½ tbsp Delta Creole Blend and stir until fragrant.
5. Toast the Rice (1–2 min)
Add rice and stir until coated in the seasoned fat.
6. Add Stock & Chicken (1 min)
Add stock, scraping the bottom of the pot. Return chicken and stir once.
7. Simmer (18–22 min)
Cover and reduce heat to low.
At 10 min: Check rice. If dry, add 2–4 tbsp stock.
At 18–22 min: Rice should be tender and chicken should reach 165°F.
While simmering: set the table, prepare sides, or warm serving bowls.
8. Finish the Base (1 min)
Turn off heat. Stir in brown sugar and apple cider vinegar.
9. Add the Shrimp (5–7 min)
Nestle shrimp into the rice mixture and cover.
At 3 min: Check one shrimp.
At 5–7 min: Shrimp should be pink and opaque.
10. Rest & Serve (5 min)
Taste and adjust with remaining Delta Creole Blend as desired. Rest uncovered 5 minutes before serving.
